Director of Procurement
Mike Dudas is a food industry professional and has been in the dairy industry since 2001. Most recently Mike has overseen all USA cheese procurement for Schuman Cheese and has been actively involved with import purchases and supplier qualification. At his time at Schuman Cheese, Mike has held various positions in the organization including head cheese grader, new product development associate and liaison for corporate quality and manufacturing sites. Born in New Jersey, Mike received his B.S. in business administration from Boston University staying close to the restaurant industry before eventually returning back to New Jersey. While in the dairy industry Mike has been responsible for ordering and overall quality of 180 million pounds of cheese annually throughout various stages of development of procurement, from selecting the highest quality DOP fully aged cheeses, to on-boarding and bringing on new suppliers to meet tight specification parameters. He enjoys both the technical side of cheese production and the customer application of cheeses spending hundreds of hours in cheese cure caves, warehouse and make plants. Mike is regarded as having a high understanding of cheese with a trained palette, which has allowed him to be selected as a judge for multiple cheese contests.
